I am not sure if there is a "slang" word for it in Mexico, but "to chew the cud" is "rumiar" and what they chew on is the "contenido ruminal".

Thanks for your input, Cecilia, but "chewing cud" is only used for ruminant herbivors, and the asker says "as in animals chewing cud". You would never say a ruminant is "masticando el bolo alimenticio" but "rumiando".
