grandeur... Sometimes it can mean "magnitude", sometimes "variable" or "parameter". Although it's a fair bet that "molar volumes" are being referred to, "experimental partial molar concentrations" may be more neutral. In the last sentence, the "écart" is being used as a variable, so you could try something like "an excess concentration parameter"
