my translation:
For a cathode ray tube, it is for example about controls applied to scanning members and on the different canons à electrons generating color pixels on the screen.
is it "scanning members or laser beam scanning members" in this contexts (or something else?)

this is what they were called when I was still working in this field (quite long time ago I must admit).
The "canons à electrons" are called "electron guns", yes, for once the literal translation is correct!

: Although it may be the correct technical term, it seems that the author was deliberately NOT using the technical term in order for the general computer user to understand (whereas "electron gun" is readily enough understood by the average geek).

Please forgive me for being stubborn, but in the old days I have designed circuits with cathode ray tubes...
I can understand that you would want to translate "organes" as something more neutral than "coils" or "vanes", why not use "deflection mechanism" which seems to have this neural flavour
