as there isn't really a translation of cromesquis (not that I can find anyway...there are a few descriptions around..), could I put 'marrow cromesquis' or cromesquis of marrow' ? - doesn't sound too nice.....

Perhaps adding the word "beef" will make it sound more appetizing and less "medical". :-)
