stone-throwing
I know the original doesn't actually say "throwing", but it just sounds a little odd to say "stones" on its own somehow! Besides, I think that is what is meant here because whatever is being done to the "caillasses", it is happening at night. By the next morning the stones are certainly lying on the ground, but during the night they are being thrown so I think this might be okay... anyone out there agree?

I just sent this 2 seconds ago, and now I'm thinking "loose rocks"?

At any rate, you were totally right to begin with, they are simply throwing rocks.

Stone-throwing
I'd add the verb just to give a more vivid image of what exactly is going on, fire-starting, stone-throwing, sirens wailing - it makes it a big more active

stone throwing
Fire tenders have been stoned by arsonists. This is what they are referring to here.
