La marque de salubrité
La marque de salubrité, ou estampille, est un tampon apposé directement sur les denrées alimentaires d'origine animale, sur leur emballage ou sur une étiquette. Par cette marque, l'Etat atteste que le produit a été élaboré dans un établissement bénéficiant d'un agrément sanitaire.
Selon le type d'agrément dont bénéficie le produit, la marque de salubrité peut être ronde ou ovale mais dans tous les cas, elle comporte la lettre du pays ou le nom du pays de l'Union Européenne (ex « F » ou le mot « France ») et le numéro d'identifiant unique de l'établissement

Whoops! Looking in dictionaries, it seems that dérogatoire "a droit de cité", while dérogataire" hasn't got its work permit yet - but I think it's not too hard to see where it came from.

Low conf because I haven't looked closely, but zero Googles for "abbatoir(s) dérogataire(s)" and a few for "anima(l)(ux) dérogataire(s)".

Seems to me there is plenty of dérogatoire/dérogataire in relation to abattoirs as well as animals.
Largely concerns refrigeration and the proximity of cutting rooms to slaughter rooms, etc., the exemption applying only for meats distributed within the "département" in which the abattoir is located and "départements limitrophes", but the idea of "dérogation" also applies to "sites d'abattage dérogatoires" (de plein air) where Moslems slaughter/sacrifice sheep.
Since nothing I have seen suggests that an "établissement/abattoir dérogatA/Oire" slaughters ONLY "animaux dérogatA/Oires", and hence would not require a special stamp, it has to refer to the abattoirs.
Les ateliers de découpe DEROGATAIRES sont soumis au respect d'une partie des exigences de l'arrêté du 17 mars 1992 cité précédemment. Ils bénéficient d'un AGREMENT SANITAIRE APPELE DEROGATAIRE à condition que le tonnage de viande ou d’abats produit par l'atelier de découpe n'excède pas 5 tonnes par semaine. Les viandes et les abats travaillés dans des ateliers de découpe dérogataires ne peuvent être commercialisés que dans le département d'implantation de l'établissement et dans les départements limitrophes.

Well, a small number of Googles would seem to indicate that the "dérogataires" does indeed apply to the animals themselves.

I am slightly more worried about that "dérogataires" — is it not a typo for "dérogatoires"? Or does this word actually exist — I can't find many examples of it..

There is certainly no doubt that "abattoirs dérogataires" do exist; but there are quite a few references out there on the Net that indicate from the way they are worded that the term clearly CAN also be applied to the animals themselves.
But I think in this present case, I tend to agree with Bourth, that the logic is that it would be the abattoir itself that would be exempted under these special conditions.
However, in view of the potential ambiguity, it might still be wisest to seek positive confirmation!
