I'm considering "failure stress" for τάση αστοχίας and "failure strain" for παραμόρφωση αστοχίας.

It should be ΤΑΣΗ ΑΣΤΟΧΙΑΣ: fju ≈ 3400 MPa

As far as I can tell, failure stress is measured in Pascals whereas failure strain in percent units. Perhaps "strain" is the answer to your next question!
