I just can't find the definition of this word!

"Her view may have been influenced in part by Diderot, who wrote a damning letter to the sculptor Falconet in St. Petersburg at a time when his friendship with the artist had soured, cogniscant of the fact that this would in turn be shown to the Empress."

Hello Yelena,
cogniscant means to have knowledge about something. In your excerpt, it means that Diderot sent a letter to Falconet in St. Petersburg in the knowledge that The Empress would also read it. By doing this, he purposely influenced the Empress to have a negative view of Falconet because he himself was no longer a friend of Falconet's.

...with prior knowledge of...

or

...safe in the knowledge that...

would be the closest "layman's" terms.

Looks like misprinted cognizant to me (знающий, осведомленный, информированный (о чем-л. - of) ; осознавший; познавший)
