English to Italian Tech/Engineering Surveying Roleplay

Ciao,
sto traducendo dei moduli formativi per un'azienda. Vengono simulati dei giochi di ruolo per vedere il comportamento che il personale assume in situazioni diverse e poi vengono fatte delle domande a mo' di sondaggio. Non capisco cosa voglia dire il termine 'dito' nella risposta seguente:

Question 1: How does the process look like today in the fermentation area?

Answer Production Manager:
> We have about 10 secondary fermentation tanks.
> The fermentation stages in different tanks does vary tank by tank.
> At the entrance of the fermentation we do the yeast propagation and add O2.
> During the fermentation that takes 11 to 14 hours we do a conversion from sugar into alcohol by using yeast enzymes.
> Throughout the fermentation the yeast enzymes consume the O2 and start to exhaust CO2.
> After about 10h we start to regularly check the CO2 at the exhaust of the fermenter and if the purity reaches more than 95% we will start to recover the CO2.

Si tratta di un errore di battitura? E, se così fosse, non riesco a capire quale potrebbe essere il termine giusto.
