After declaring that part of the research had been financed by a bacteria producer, a guest of the Director General presented a communication on malolactic fermentation activators: lactic acid bacteria have significant nutritional needs, so a lack of nutrients in wine may contribute to the delay or hindrance of the initiation of MLF. This work assessed the composition of several nutritional products for bacteria, as well as their effect on bacterial viability.
