Perhaps this will seem easy to most of you, but I have trouble finding a suitable expression:

What exactly is Gemüt?

According to 'Der Große Reuter', 'Gemüt' is mind, mood or temper.

'mood swings' would be an appropriate term:

"Mood swings are universal, varying from the microscopic to the wild oscillations of manic depression, so that a continuum can be traced from normal struggles ..."
