In base alle caratteristiche delle brattee si distinguono anche i carciofi spinosi (le cui foglie terminano, appunto, con una spina) e quelli inermi. La raccolta è scalare e va da ottobre fino a giugno. Ci sono varietà autunnali che producono i capolini medio-piccoli nel periodo tra ottobre e novembre e, tramite forzatura, possono rifiorire in primavera, e varietà primaverili che producono fiori solo dopo la fine dell’inverno.
