Selected
(a) superbly extracted (champion, thoroughbred)
The extract (non-volatile solids) referred to comes from the grape and contributes to the body, flavour and colour of the wine.
The purely descriptive "highly extracted" might be interpreted as a defect (over-extraction). A value judgement like "superbly" is probably better here.

: So over-extraction / sovraestrazione does not fit in this context ? I'd like your instructional feedback, Giles! / Thank you Giles !!

Over-extraction is a fault; "alto rango estrattivo" is obviously a compliment, referring to "how" the wine was extracted, not just "how much".

: Giles, I'd be interested in any comments you might have on the contrast between "menthol-edged" and "minty" in the previous question (mentoso).

It's not negative, just neutral, but the Italian phrase is very positive.

high quality extractive wine
i believe 'estrattivo' refers to the flavour the wine gains from the barrels in which it is aged
