How to invoice if hours requested is more than acually needed/used

What should you invoice if the deposition ended earlier (10am-2pm) than anticipated (10am-7pm)? should you charge the entire time indicated on the P.O. 10am-7pm?

You made yourself unavailable for the duration requested by the customer, thus unable to accept other assignments.

I would bill the customer for the time agreed upon.

Is this a one-off customer that you never expect to hear from again?
Was time-consuming travel involved?
Is the hourly fee good or bad?

Factors like that could influence the decision.

If you've refused other work in order to do this assignment, invoicing the entire timeframe isn't unreasonable. Still I think I would generally invoice the hours worked, and charge it to experience. Being fair in this way is sometimes remembered.
