Evidentemente si tratta di un tema in cui la competenza del medico specialista è fondamentale, ma da quando la tecnologia diagnostica si è sempre più semplificata, diverse aziende propongono sistemi di identificazione dei più comuni allergeni alimentari anche ad altre figure professionali, dai farmacisti ai biologi e ai dietologi. Considerato, però, che il prelievo da puntura da dito può essere effettuato direttamente dal paziente, oggi il test può essere offerto anche da strutture diverse dai laboratori d'analisi: centri termali, SPA, Centri benessere, Centri estetici. Per capire come ciò sia possibile, partiamo con lo spiegare cosa siano le intolleranze alimentari e come possano essere causa di disturbi che traggono origine dalla incapacità dell'organismo di digerire completamente alcuni alimenti, che vengono degradati soltanto a livello di macromolecole, non utilizzabili né per la produzione di energia né per la crescita cellulare.
L'accumulo nel tempo di queste sostanze lungo la parete intestinale e nel tessuto di vari organi può essere causa di processi infiammatori.
